Gooseberry Wine
Recipe
Recipe for 4.5 litres (1 gallon) and may be multiplied.
All teaspoon measures are level.
2 1/2 lbs. Gooseberries
7 pints Water
2 1/4 lb. Sugar
½ teaspoons Pectic Enzyme
½ teaspoon Potassium Sorbate
1 teaspoons Yeast Nutrient
1 Campden Crushed
1 Wine Yeast
Method:
(1) Use firm ripe berries for the wine. Wash and sort out blemished or moldy
berries and drain water. The juice is hard to press. Using nylon straining bag,
mash and strain out juice into primary fermenter. Keeping all pulp in bag , tie
top, and place in primary.
(2) Stir in all other ingredients EXCEPT yeast. Cover primary.
(3) After 24 hours add yeast. Cover primary .
(4) Stir daily ,check S.G. strain pulp lightly to aid juice extraction.
(5) When S.G. drops to 1.030 (about 5 days) strain juice lightly from bag.
Siphon wine off sediment into glass secondary . Attach airlock .
(6) When fermentation is complete (S.G. has dropped to 1.000 about 3 weeks )
siphon off sediment into clean secondary . Reattach airlock .
(7) To aid clearing siphon again in 2 months and again if necessary until
clear before bottling.
(8) Filter your Wine
(9) Bottling - add ½ teaspoon Potassium Sorbate
If your wine is not sweet enough, add Wine Sweetener and Conditioner
to taste.
