Fillets Of Cod Supreme
Ingredients:
1 Medium sized onion, peeled and sliced
1 tbsp. butter or margarine
6 fillets of cod (about 2 lbs. or 1 Kg.)
1 tsp. salt
1/2 tsp. leaf tarragon
1/4 tsp. pepper
1/2 lb. fresh mushrooms, trimmed and sliced
1/2 cup White Wine such as Sauvignon Blanc, Riesling or
Chardonnay
1 tsp. cornstarch
2 tbsp. cold milk
Instructions:
In a large heavy frying pan, sauté onion in butter or margarine until soft.
Place fillets over onion; sprinkle with salt, tarragon, and pepper, arrange
mushroom slices on top. Pour wine into pan and heat to boiling, cover. Simmer 8
to 10 minutes, or until fish flakes easily. Carefully lift fillets and mushrooms
from pan with spatula and place on a serving platter. Keep warm. Blend
cornstarch and milk, stir into liquid in pan. Cook and stir until sauce
thickens. Spoon over fish and mushrooms.
