Dogberry Wine
Recipe
Recipe for 4.5 litres (1 gallon) and can be multiplied
All teaspoon measurements are level
2.5 lbs. Dogberries
9 pints water
1 kilogram sugar
1 1/4 teaspoon Acid Blend
1 1/4 teaspoon Pectic Enzyme
1 teaspoon Yeast Nutrient
1 Campden Tablet ( crushed )
1 pkg. wine yeast
1/2 tsp potassium sorbate
Method;
(1) Use ripe berries, picked after the first frost. Remove stems, rinse off
and drain. Put into a nylon straining bag, crush and squeeze juice into the
primary fermenter. Keeping pulp in the bag, tie the top and place into the
primary.
(2) Stir in all other ingredients EXCEPT yeast. Cover primary.
(3) After 24 hours prepare yeast as per instructions on package. Add to
primary and stir vigorously for 2 minutes. Cover Primary.
(4) Stir daily checking specific gravity and squeezing pulp slightly to aid
extraction.
(5) When S.G. reaches 1.040 ( 3--5 days), syphon wine off the sediment into a
glass carboy. Attach airlock.
(6) When fermentation is complete ( S.G. 1.000 about 3 weeks ) syphon off
sediment into a clean secondary. Attach airlock.
(7) Syphon off sediment again in 2 months to aid clearing, and again if
necessary before bottling.
(8) Filter your wine
(9) Add 1/2 tsp Potassium Sorbate
Bottling:
To sweeten wine add wine conditioner to
taste.
